Minted boiled baby new potatoes

If oven-space is likely to be taken up with the turkey, then cooking vegetables on the stove-top is a good idea.
Ingredients
Baby new potatoes allow 3-4 per portion
Salt
Fresh mint sprigs
Butter
Fresh mint, chopped
Method
Scrub potato skins to remove any dirt.
Cut any larger potatoes so that they are all evenly sized.
Add to a pot of boiling, salted water with the mint leaves.
Reduce heat to a simmer.
Use a fork to test for doneness.
When ready, drain and mix in some butter and finely chopped mint.
Serve in a heated serving dish.
