Kumara baked in orange juice

If oven space is at a premium this could be baked ahead and then reheated in a microwave.
Makes: Approx 6 portions
Ingredients
1 kg kumara, peeled
50 g butter, melted
1 tsp fresh ginger
¼ tsp cinnamon
½ tsp salt
½ C orange juice plus zest of 1 orange
3 tbsp brown sugar
Method
Slice kumara into 1-cm slices and layer in a greased oven or microwave dish.
Mix the remaining ingredients together and pour over the kumara.
Cover with foil or a lid.
Bake at 180°C for 30-40 minutes
Use a fork to test for doneness. When nearly cooked through, remove the covering and continue cooking until kumara is soft and liquid has thickened.
