Summer turkey salad

Makes: 6 servings
Ingredients
1 C cooked turkey meat, chopped or shredded
1 C chopped nectarines or peaches
½ C finely chopped celery
½ C almonds, toasted and roughly chopped
1 C diced red capsicum
2 C cos or buttercrunch lettuce, torn
Dressing
½ tsp crushed garlic
½ tsp salt
½ tsp honey
1½ tsp (20ml) lemon juice
1/3 C (80 ml) olive oil
Method
Put all salad ingredients in a large bowl.
Mix garlic, salt, honey and lemon juice together.
Stir in the olive oil.
Toss dressing with salad.
