Summer turkey salad

Makes: 6 servings

Ingredients

  • 1 C cooked turkey meat, chopped or shredded

  • 1 C chopped nectarines or peaches

  • ½ C finely chopped celery

  • ½ C almonds, toasted and roughly chopped

  • 1 C diced red capsicum

  • 2 C cos or buttercrunch lettuce, torn

  • Dressing

  • ½ tsp crushed garlic

  • ½ tsp salt

  • ½ tsp honey

  • 1½ tsp (20ml) lemon juice

  • 1/3 C (80 ml) olive oil

Method

  1. Put all salad ingredients in a large bowl.

  2. Mix garlic, salt, honey and lemon juice together.

  3. Stir in the olive oil.

  4. Toss dressing with salad.
