Bacon-wrapped Turkey Roast with Spiced Apple Sauce

Bacon-wrapped Turkey Roast with Spiced Apple Sauce

Makes: 12 Servings

Ingredients

  • 1 Crozier 2.5 kg boneless turkey roast, thawed

  • 12-15 streaky bacon rashers

  • 1 litre clear apple juice

  • 1 tablespoon oil

  • Sauce

  • 1 cup dried apple slices

  • 1 ½ cups (375 ml) clear apple juice

  • ½ teaspoon mixed spice

  • ½ teaspoon ground black pepper

  • 1 tablespoon arrowroot

Method

  1. Preheat the oven to 180°C. Run the flat blade of a large knife along each bacon rasher to flatten and spread. Pull back the netting from one end of the turkey so that half of it is exposed. Starting at the centre and working towards the exposed end, lay overlapping rashers of bacon across the turkey, gently easing the netting back over the bacon as you go. Repeat this procedure for the remaining end until the meat is completely covered in bacon. Secure the ends of the netting by tying.

  2. Place the turkey bacon-side up on a rack in a roasting pan. Cover with a lid or loosely with some foil. Pour some apple juice and some water into the base of the pan. Check on the liquid level during cooking and keep topped up with juice and/or water as needed.

  3. Cook in the pre-heated oven for approximately 2 hours before removing the cover and finishing the cooking. See tips on cooking

  4. When ready, remove the turkey from the oven and the roasting pan. Cover it with foil and allow it to rest for 10 to 15 minutes before snipping off the net. Brush with a little oil before carving.

  5. Make the apple sauce while the turkey is cooking. Put the apple slices and juice in a saucepan and bring to boiling point. Remove from the heat and add spice and pepper. Allow to rest for 1 hour. Mix the arrowroot with a little water. Stir into the apple mixture then stir over heat until boiling point is reached and sauce is thickened and glossy. May be served hot or at room temperature.
